Ingredients:
2 cups (1 15oz can) pumpkin
1 cup vegetable oil
½ cup unsweetened apple sauce
4 eggs, beaten
2 tbsp molasses
2½ cups flour
2 cups sugar
2 tsp baking soda
2 tsp baking powder
1½ tsp cinnamon
1 tsp ground cloves
1 tsp salt
¾ cup chocolate chips
Instructions:
Mix together pumpkin, oil, applesauce, eggs, sugar, and molasses in a large bowl. Combine flour, baking soda, baking powder, cinnamon, cloves, and salt in a separate bowl.
Gradually add dry ingredients to pumpkin mixture. Mix well. Stir in chocolate chips.
Line 2 muffin tins with paper liners. Fill ¾ way full.
Bake at 375º F for around 20 minutes.
